Spaghetti With Zucchini Noodles

Eat your spaghetti just skip the pasta! I love my spiralizer! If you have not used one you should try it! I bought the spiralizer brand years ago on Amazon and it’s awesome. Store bought zucchini noodles can be slimy and not so fresh. Make them yourself and it lasts days in the fridge! I have made meat sauce and vegetarian marinara sauce and they both taste great on the zucchini noodles!

If you are cutting carbs or on the Keto plan this amazing grass-fed beef spaghetti sauce is delicious on zucchini noodles. You won’t even miss the pasta! Spiralized zucchini is a healthier option than most store-bought pasta alternatives. Many of those contain additives and thickening agents like xanthan gum. Once you try the fresh spiralized zucchini you won’t even want that boxed processed stuff anymore! Promise! Check out my blog post on spiraling here

Here is a hint: If you heat up your sauce and mix it into the zucchini noodles it is better. Hot sauce on cold zucchini noodles is not as good. You can also lightly heat the noodles then top with your delicious sauce. I love my beef spaghetti, I grew up with my Grandma’s recipe. Not Italian but so yummy! My Grandma was Assyrian and Middle Eastern food was what I learned growing up but my sweet Grandma was an awesome cook and put her signature on all she created for her family. That being said, garlic and allspice. Yep allspice. It makes the sauce simple yet comforting. Of course you can add the traditional Italian spices or even a little red pepper flakes to spice it up but for today I want Grandma’s simple sauce.

Ingredients:

  • 1 1/2-2 pounds grass-fed beef
  • 2 tablespoons of olive oil or coconut oil
  • 1/2 large sweet onion chopped small
  • 4-5 cloves of garlic chopped small
  • 1 28 oz can of whole tomatoes (crush them) or can of chopped with juice
  • 1 tablespoon allspice
  • fresh cracked pepper to taste
  • Celtic sea salt to taste (be careful taste 1st tomatoes may have salt)
  • 1/2 teaspoon of oregano
  • 2 zucchini spiralized

Directions:

Heat a stock pot on medium high and add oil. Add beef and brown until no longer pink. Add onion and stir together. Cook 2-3 minutes. Add garlic and cook another minute. Add all spices to blend. Next add crushed or chopped tomatoes. Taste for salt. Cover and let simmer about 30 minutes on low. My Grandma would sometimes add flour to thicken but I don’t. It will be watery not thick. The juice is amazing I drink it 🙂

This sauce is healthy and gluten-free. Low carb, high protein  and keto-friendly.

Gently heat your zucchini noodles and top with the hot sauce. A new take on spaghetti, the healthy way! I hope you enjoy 🙂
