Summer is here! Time for healthy, refreshing and best of all, homemade popsicles!
I just love popsicles don’t you? It’s not easy to find delicious ones without a ton of sugar or even worse chemical fake ones. Who needs that! Besides the high amount of sugar, many store-bought popsicles contain ingredients like high fructose corn syrup, artificial colors and flavors as well as preservatives. According to EWG (environmental working group) there can be food chemicals in ice cream and popsicles including titanium dioxide. Many reasons to avoid these!
Homemade is so much better! If you have never made your own you should try it! They are so easy and you can create your own masterpiece with your choice of healthy ingredients! This recipe below has only five natural ingredients and they are delish! They are my current favorite but I love trying new combinations.
You can make a variety of flavors of popsicles or even better creamsicles by using different combinations of fruits, juices, yogurts and even coconut cream! When I first started experimenting I found out my favorite blends were with yogurt. The extra creamy texture reminded me of creamsicles when I was a kid 🙂 I also love that you can add honey or maple syrup to sweeten them naturally and to your liking.
Make them with your kids or grandkids! So many different recipes to try. I like the silicone molds, they make them easy to remove. You can tell by my picture above they came out perfect. I love how pretty these look. This is by far my favorite popsicle yet and they really taste amazing. Try adjusting the sweetness to your liking.
Tip: I would suggest roasting the nectarines first it really does make the flavor pop. You will see other recipes that don’t roast them. If you decide not to then I would make sure the nectarines are ripe and sweet.
Here is the recipe I hope you try them!
Ingredients:
- 4 nectarines pitted and sliced (skin on)
- 4-6 tablespoons honey
- 2 cups of whole milk (full fat) organic yogurt
- 1/4 teaspoon celtic sea salt
- 1/2 teaspoon vanilla
Directions:
Preheat oven to 350.
Place sliced nectarines on a parchment paper lined baking sheet.
Drizzle with 2 Tablespoons of the honey and roast for 30 minutes or until they are soft and slightly darkened on the edges.
Blend together the yogurt, vanilla salt and remaining honey.
Once the nectarines are cooled, mix with the yogurt mix. Include the juices of the nectarines.
Transfer into silicone popsicle molds and freeze for 4 hours or until firm.
